A 25+ year veteran of the Food & Beverage industry, Chef Brian’s career includes culinary experience in boutique hotels, pubs, and country clubs in several provinces across Canada. With a strong start to his culinary career, Chef Brian was the recipient of “Best Apprentice Cook of the Year” while enrolled at Culinary Arts School in Alberta.
After completing culinary school and receiving his Red Seal, Chef Brian went on to own and operate his own establishment “Hourigans Irish Pub”. More recently, he was employed as Chef for the Cirque du Soleil’s travelling show based out of Montreal, Quebec. He is excited to bring his culinary skills and experience from his travels where he learned about a variety of traditional foods from many countries.
Honoured to be the Executive Chef at Aqsarniit Hotel and Conference Centre, Chef Brian is eager to assemble his culinary team to provide our guests a one of a kind dining experience in Iqaluit. His passion for cooking will infuse his personality across Aqsarniit Hotel’s signature dining experience.
Chef Brian’s philosophy is “Don’t cook to impress people, cook to make them happy”.
